Ingredients
- 3 large eggs
- Kosher salt
- Freshly ground black pepper
- 3 cups finely chopped button mushrooms (20ish)
- 4 green onions, finely chopped
- 1 10-Ounce package of frozen chopped spinach, thawed and squeezed
- 2/3 cups plain bread crumbs
- 3/4 cup crumbled feta (small package)
- 3 tbsps. extra-virgin olive oil
- Optionals:
- Mango Chutney
- Small hamburger buns
Method
- Preheat the oven to 300 °F
- In a large bowl, beat together the eggs, 1/2 teaspoon salt, and a pinch of black pepper. Gradually mix in the mushrooms and green onions.
- Add the spinach and gently fold the bread crumbs until everything is blended together.
- Shape the mixture into 3-inch patties on a parchment paper lined baking sheet, making roughly 8-10 patties.
- Add 1 1/2 tablespoons of olive oil to a non-stick frying pan, and add half the patties allowing the one side to brown for 4 minutes before flipping and cooking for an additional 4 minutes.
- Carefully transfer the patties to a plate and keep covered while the remaining patties are cooked.
- Serve warm.
