Ingredients

  • 3 large eggs
  • Kosher salt
  • Freshly ground black pepper
  • 3 cups finely chopped button mushrooms (20ish)
  • 4 green onions, finely chopped
  • 1 10-Ounce package of frozen chopped spinach, thawed and squeezed
  • 2/3 cups plain bread crumbs
  • 3/4 cup crumbled feta (small package)
  • 3 tbsps. extra-virgin olive oil
  • Optionals:
    • Mango Chutney
    • Small hamburger buns

Method

  1. Preheat the oven to 300 °F
  2. In a large bowl, beat together the eggs, 1/2 teaspoon salt, and a pinch of black pepper. Gradually mix in the mushrooms and green onions.
  3. Add the spinach and gently fold the bread crumbs until everything is blended together.
  4. Shape the mixture into 3-inch patties on a parchment paper lined baking sheet, making roughly 8-10 patties.
  5. Add 1 1/2 tablespoons of olive oil to a non-stick frying pan, and add half the patties allowing the one side to brown for 4 minutes before flipping and cooking for an additional 4 minutes.
  6. Carefully transfer the patties to a plate and keep covered while the remaining patties are cooked.
  7. Serve warm.
